Leg warmers are good when learning to knit in the round. You could knit them flat then sew them up the back.
Dish cloths can be easy and fast If you get bord quickly there are a lot of free ones on the net. Cotton yarn is pretty cheap too.

the site below has some simple patterns. You could make dish cloths from cotton yarn (very useful!) or make squares to sew into a blanket. many are simple but wold be good to get you trying new ideas.

You might try challenging yourself by learning new stitches. Then sew them into an afghan…sort of a knit sampler. One of my favorite sites for free patterns is http://www.knittingpatterncentral.com This site has patterns arranged in catagories, and different types of stitch patterns.
Try a pair of socks. You don’t need much thread and it doesn’t take forever to complete.
Dishcloths are a quick easy way to try out new stitches. Shawls are another. You’ll learn shaping, different increases/decreases, etc.
Baby blankets are also a good start. You’ll learn how to use DPNs or the magic loop method if you try out hats. More shaping and some cabling. Go to http://www.knittingschooldropout.com for an easy hat pattern. I think it’s called Really Warm Hat. It’s knit with bulky yarn and super easy.

Not just one item in particular but things you normally would not think would be in your category of knowledge of your hobby. The first thing my mother had me do when she taught me to knit was a hat. It was done in k2, p2 ribbing we cast on an even number of stitches to make it big enough to go around my head when it was sewn up the back and l knit it long enough to Pull it on to where I wanted it with enough left over to run a basting stitch near the top to cinch it closed and then we made some medium size pom poms to attach to the top. You can use any kind of yarn you like. I didn’t make a scarf for a good 20 years. Too busy making baby clothes for my friends and relatives that had babies and sweaters for friends that didn’t. Doll clothes are fun and quick to make too.

there are all kinds of knitting projects to choose from for free and you can watch video demonstrations of some things. Check out the “Knitty Gritty” show episodes online on the same site. It’s a show all about knitting and they do all kinds of beginner projects that aren’t a boring scarf.
if you want to challenage yourself try to make yourself a fitted sweater that has cables on it.

I found these amazingly easy to make and within one day I had a pair done. If your got the stitches down pat and understand how it all works you can easily adjust these for different size arms. As it is I was able to make them for my daughters on smaller needles. I also figured out how to make them longer and by using thinner yarn, thinner. The basics pattern for these gloves are easy to adjust.
