I’m having a costume made and the person asked me if I needed
normal textile cotton or knitting material cotton. And I don’t really know the difference, but I don’t want to say the wrong one…
So can someone tell me the difference and possibly some examples?

Normal cotton is woven and not really all that stretchy — unless it has some lycra in it. Some examples would be denium, linen, dress shirt material
Knitted cotton is like t-shirt material. It is stretchy. . .
