Wool is warm but itchy around the neck. There are so many blends to choose from now, even bamboo and soy (who knew!) Here is a link for patterns and to marymaxim to check out their yarns and catalogue. Any weight will work with acrylics but if you have a pattern with a lot of large st like popcorns, I would use worsted or sport weight.
I’d use a superwash wool, Like Shepherd Worsted from Lorna’s Laces. It’s not scratchy and and can be machine washed. Plus you can knit it up on size 8 or 9 US needles and it’s fairly fast. If your friends are up to handwashing their scarves then a bulky or worsted alpaca would be gorgeous for a scarf. Spun silk makes a lovely, warm, light scarf and you could get away with it in a fingering or lace weight yarn. Bamboo is also quite warm, and anti-microbial as well.
Fisherman’s Rib makes a great unisex scarf when you knit about 6 inches of width. Simple and fast once you learn the stitch pattern. Check you library for the Barbara Walker Stitch Treasuries to find the pattern instructions for that stitch. Mistake Stitch Ribbing is also quite nice, too.

If you want it to look more casual, use a thicker yarn, if you want it dressier use a thinner yarn.
