Depends on the yarn. Some yarns are bulky so it would take more.
Most of the patterns I have seen it is usually three, but again it depends on the yarn.
Try this website:

They have free patterns if you register, registration is free and they have tons of baby blanket patterns.
Good Luck!
it depends on the pattern, gauge and yarn. first pick out the pattern that you want the person to make for you. then the pattern will tell you how much yarn you need.
Here is some information for you and this is for baby blankets they all give the sizes so you can use that in choosing your blanket. Don’t forget the baby will grow up and you can always look for a pattern for an afghan you like that can last you a lifetime. If I can help you any further e-mail me.
• Sizes 28″ x 32″(34″ x 38″,40″ x 46″)
• Yarn: Encore Worsted 4(6,8)balls {I don’t know how many ounces the skeins hold}
a small afghan (sized for a baby blanket, afghan for a small child or for a lap robe):
About 21 oz. Worsted weight yarn
Size G crochet hook
Finished size: about 31 1/2″ x 42″
About 18 oz. Red Heart Soft Baby (sport weight) in Color 7951 Angel Print
U.S. size E hook
Width = 26 1/2 inches (before edging is added)
Length = Your Choice. Instructions are given for repeating the pattern rows to achieve length desired. 36 inches is an average length but your blanket can be shorter or longer, as desired.
And I have one that is 50″ square that asks of 3ply Red Heart Tangle Proof 14 ounces
A good baby blanket is about 36 inches square. Pick the pattern you like then read it to see how much yarn it takes.
Some times the patterns state that you need X number of skeins of a specific yarn, some say you need X grams of yarn, some say you need X ounces of yarn.
Baby yarns are usually in 3/4 ounce or 1.5 ounce, or 5 grams.
You will need to do some math to figure out how many skeins of yarn you will want for this blanket.
This site has loads of fairly simple patterns that are just lovely. http://home.inreach.com/marthac/links.html
