I am knitting a blanket on round needles, what does it mean when it says, ‘Blanket is worked holding two strands of yarn together?’

You would work the same as with straight needles, stitching to the end of your work, turning and work the other edge of your work. The round needle allows you to have more stitches on your needles, (at least if you work on one needle at a time and the needle is long enough.
‘holding two strands of yarn together’ means that you work with 2 strands of yarn as if they were one thicker one.
So each stitch you use both yarns together, on your needle will be two bits of yarn in each stitch, and when knitting you will insert your needle though both yarns.
