You can look at this chart to figure out how many millimeters around the needles are. For instance, your size 10′s would be 6mm.

That doesn’t exactly tell you how wide it is, but you have to consider it’s thickness too, so I would think making it just a bit over 6 cm’s would do the trick nicely.
You can use the cart to work from for each size.
Happy knitting
I made a case years ago that still works and just used a piece of material for the bottom and then put a heavy piece of plastic over the top, then stitched a number of rows about finger width, then a couple that were wider.
The width of the columns will depend on whether you use mainly large needles or have a variety of fine ones. Make sure you have one very wide pocket if you use circular needles, and it’s also handy to have one wide enough to take a stitch holder. I also added a small pocket to put my darning needles in so that I don’t have to hunt for them when sewing my knitting up when finished.
Good luck
Most sewing patterns for knitting needle rolls have pockets that are 1.5 to 2 inches wide.
Here’s a great tutorial: http://alexandrasknits.blogspot.com/2006/01/tutorial-alexandras-needle-case.html
There are even tutorials for making needle rolls out of placemats:
